Sweet Taters & Apples

2 Sweet potatoes. peeled & sliced 3 Apples, peeled, cored & sliced 1 cup Apple juice 1 Tbsp Corn starch
In a casserole dish with a lid, layer the sliced sweet potatoes and apples. Combine the apple juice and corn starch and pour over the apple/sweet potatoes. Cover with a lid or foil. Bake at 350 degrees until sweet potatoes are tender, about 1 hour.
